BACKSTORY
This flavor is a sight for sore eyes, and packs a serious flavor punch that’s hard to find and worthy of a try. The prickly pears we source are some of the best tasting, sweetest smelling we’ve come across– thanks to the people, growing practices, climate and landscape.
Better known for farming wine grapes, Pete Stolpman is deserving of big thanks. When Pete reached out with a radical idea–to collaborate with Sideyard on new and limited flavor releases, using his famous, estate-grown tunas (prickly pears) in a non-alcoholic, fruit-infused vinegar–we smiled big and excitedly said yes (repeatedly, over and over again) to doing the Sideyard dance. What we’ve made and produced together is a prickly pear vinegar (with no alcohol or added sugar) unlike anything out there, made exclusively from estate-grown prickly pear tunas from Stolpman Vineyards.
This most recent fall growing season, we sourced an abundance of tunas from Stolpman Vineyards. We’ve known and long admired the natural farming and sustainable wine grape growing practices embraced by The Stolpman Team at the Ballard Canyon Estate. At Stolpman, everything–from pruning cuts and vine training, to bottling–is done by hand, and made possible by a small team of passionate and dedicated people. The wine grape vines, olive orchards and prickly pear cactus plants cultivated and grown at Stolpman Vineyards are tenderly-loved, and precisely cared for by a highly skilled full-time workforce, La Cuadrilla.
